Global knives posses extraordinary sharpness. The steel used is among the hardest in knife manufacture, even harder than high quality forged steel knives. A Global knife will last a lifetime and will mantain its sharpness much longer than cheaper knives.
Global knives should not be sharpened using a conventional metal sharpening steel though, as this just restores the edge between uses, eventually the knife will blunt. A diamond sharpening stone used between every tenth use of the conventional steel will maintain the slenderness of the edge and provide perfect sharpness.
This generous sized knife sharpener is formed of millions of extra fine industrial diamonds. Wet with a little water, and a few strokes of the knife is enough to restore performance to ‘as new’.
We use these steels all the time with our Global and other knives, and are constantly impressed by the ease of cutting now.
